1 teaspoon grated lemon zest
2 tablespoons chopped fresh flat-leaf parsley
1 Preheat oven to 400°F. Spray large roasting pan with nonstick spray.
2 Combine cumin, paprika, ginger, salt, pepper, cinnamon, and cayenne on sheet of wax paper.
3 Combine potatoes, 1¼ teaspoons of spice mixture, the oil, and garlic in large zip-close plastic bag. Seal bag and shake until potatoes are coated evenly. Transfer potato mixture to prepared pan and spread evenly. Roast, stirring once, until potatoes are almost tender, about 15 minutes.
